Egg and Bacon Puff Pie


  • 3 eggs, separated
  • 1lb bacon
  • 4 oz Puff Pastry Dough
  • 8 oz Mozzarella cheese
  • 1 c. sour cream
  • ½ c. flour
  • ½ tsp salt
  • Freshly ground pepper to taste


  1. Preheat oven to 350oF and bake bacon until crisp.
  2. Drain and crumble into large pieces.
  3. In a large bowl, combine and mix egg yolks, sour cream, flour, salt and pepper.
  4. Mix well. Fold in stiffly beaten egg whites.
  5. Spread each piece with ¼ cup of mustard and top with ½ lb of ham.
  6. Line ungreased 10” pie plate with rolled out dough.
  7. Then add to dough, in this order : bacon, pieces, cheese and egg mixture. Bake for 35 minutes or until ingredients have set.
